Chicken Bhuna and Pilau Curry Recipe

“Bhuna” doesn’t actually refer to a curry – the word describes the cooking process of spices, where they are fried over a medium heat to reveal their favours. Below is my chicken bhuna recipe that follows this method of cooking. The chicken breast meat is added to the spices and basically cooks in it’s own juice.

This recipe serves 4, has a preparation time of 2 hours and a cooking time of 30 minutes.

The ingredients for the curry:

4 chicken breasts, 6 tbsp plain natural yoghurt, 2 garlic cloves, 1 tsp garam masala, 1 lemon, tsp turmeric, 1 tbsp paprika, 3 cardamoms, tbsp salt, 1 tbsp ground chilli, 1 tbsp cumin, vegetable oil, olive oil, fresh coriander.

Pilau rice ingredients:

2 cups basmati rice, 1 onion, 1 clove of garlic, cinnamon stick, 2 cardamom pods, 1 tbsp fennel seeds, vegetable oil.

Method: Preparing the Chicken

1. Spoon the yoghurt into a bowl. Add the garlic by crushing it in and also mix in the spices – garam masala, turmeric, paprika and cumin. Then crush in the cardamoms (after removing the husk) and add the ground chilli and salt.

2. Cut the lemon in half and squeeze the juice into the mixture. Stir together well.

3. Cut the chicken breasts into mouth-sized pieces and add to the marinade, and allow it to stand for at least two hours.

Method: The Pilau Rice

1. Chop the onion into fine pieces and add to a saucepan with 1 tablespoon of olive oil. Fry gently.

2. Wash the rice with cold water and add to the pan with the onion. Crush in the garlic and add the cinnamon, fennel seeds and cardamom. Mix the rice and other ingredients well before pouring water completely over the rice. Turn up the heat.

3. When the water begins to boil you need to leave it boilding for 5 minutes. Then, put the lid on the pan and turn off the heat. Leave it to stand for 20 minutes.

Method: Put the Curry Together

1. Pour a tablespoon of olive oil into a frying pan and place over a high heat. Once the pan is hot add the chicken and fry until you’re happy the chicken has been cooked through.

2. Add the garam masala and coriander and fry for another 30 seconds.

3. Dish up the rice from the saucepan onto 4 warm plates, and then add the chicken. I recommend serving with a warm peshwari naan bread.

Chicken Dhansak Curry Recipe

The Dhansak originated from a community of people originally from what is now called Iran. It’s a meal that is traditionally preapred on Sundays since it can sometimes be a time consuming process to make.

The chicken breast recipe below contains fruit juice to sweeten the flavour, but the traditional recipes would never contain any fruits, and would be sweetened by pumpkins or butternut squash.

This meal can be ready within an hour, and will serve four people.

Ingredients:

4 chicken breasts, 300ml chicken stock, 200ml pure pineapple juice, 100ml mango chutney, 5 onions, 2 garlic cloves, fennel seeds, 50ml natural yogurt, ginger puree, tomato puree, 400g lentils, turmeric powder, mild curry powder, chilli powder, garam masala powder, fresh coriander leaves

Method:

1. To begin, make the onion puree. To do this simply peel and chop 3 onions into small pieces and add to a small pan of boiling water. When you are happy that the onions are soft remove the pieces from the water and blend them into a puree.

2. Follow the same method above with the lentils to make the lentil puree.

3. Next, add a couple of teaspoons worth of fennel seeds to a heated pan over a high heat. Toast them over the heat until they start to sizzle. Then add in some oil and the rest of the onion. Fry them until the onions are a fantastic brown.

4. Make the curry paste in a small bowl – 4 teaspoons of the curry powder, 2 teaspoons of turmeric powder and 1 teaspoon of chili powder should do the trick. Then add a little water and mix thoroughly. Crush in the garlic and grate in a little ginger and you’ll have your paste!

5. Cut the chicken into 1/2″ cubes. Add the paste to the pan and heat through, and then add the chicken in. Make sure the chicken is well coated in the curry paste.

6. Spoon in the mango chutney and then pour on the pineapple juice – stir the mixture well.

7. In a separate bowl mix together the onion and lentil puree, add in 2 tablespoons full of tomato puree and stir in all the yoghurt.

8. Add the chicken stock to the saucepan and turn up the heat bringing it to a simmer. Pour in the yoghurt mixture and leave for around 15 minutes, stirring every few minutes.

9. After 15-20 minutes add 2 teaspoons full of garam masala. Give it a final really good stir and give it another couple of minutes on the heat.

10. Serve onto warm plates with rice and naan bread, and my favourite drink with this recipe is an ice cool Tiger beer.

Chicken Balti Recipe

The word “balti” actually refers to the serving dish rather than to an individual recipe. It’s popularity grew during the 80′s after it was introduced to the UK in Birmingham. Below is a great tasting, reasonably spicy chicken curry recipe.

Serves four, ready in one hour, fifteen minutes.

Curry Sauce Ingredients: Olive oil, 1 onion, 4 cloves garlic, 4cm piece of ginger, 2 green chillies, teaspoon turmeric powder, teaspoon cumin seed, teaspoon coriander seed, 1 teaspoon tomato puree

The Chicken Balti Ingredients 4 boneless skinless chicken breasts, olive oil, 2 green peppers, 2 red peppers, 2 onions, 3 green chillies, 2 red chillies, 1 teaspoon cumin seeds, 1 teaspoons paprika powder, 1 teaspoons tumeric powder, teaspoon ground cinnamon, 1 teaspoon tomato puree, 1 teaspoon garam masala, salt.

I have split the method into two separate threads – one first for creating the curry sauce, and then another for the main meal. I think this just makes it easier to follow.

The Curry Sauce:

1. Put a small saucepan over a high heat and drizzle in some oil. Chop the onion into small pieces and add to the pan. Stir for a couple of minutes until the onion is soft.

2. Crush the garlic cloves into the pan and stir. Deseed the green chillies and then chop into little chunks and add these to the pan too. Next grate the ginger in, and stir it all up well.

3. Lower the heat and continue to stir for another 15 minutes.

4. Now add the teaspoons of spices (turmeric powder, cumin seed and coriander seed) and stir for another 3-4 minutes.

5. Turn off the heat and allow the mixture to cool. Take a blender and add 125ml of cold water to it. Once the mixture has cooled sufficiently add to the blender with the tomato puree and blend until you have a fine, smooth puree.

6. Tip the paste back into the saucepan and turn the heat to low. Now, you’re ready to start preparing the main part of the meal, but as you do ensure you stir this sauce occassionally. It should turn a dark orange colour as it slowly heats.

The Balti:

1. Cut the onion, pepper and chillies into chunks. Deseeds the chillies too.

2. Cut the meat into handy mouthful sized cubes.

3. Add some oil into a wok and put it over a high heat. Put the peppers into the oil and stir fry for some minutes. Just as they begin to turn brown around the edges remove them and set aside for later.

4. If you’re running low add a little more oil to the pan. Add the cubes of chicken you prepared earlier and a pinch of salt and pepper to season. Fry the chicken (in batches if there’s too much) until you’re happy they are cooked through and remove them for later too.

5. Turn the heat to medium and add a couple more tablespoons of oil to the wok. Throw in the chopped onion, chillies and cumin seeds and fry until the onion is soft – you shouldn’t let the onion begin to burn or turn brown.

6. As soon as the onion is soft add the paprika, turmeric and cinnamon and stir fry for a further 30 seconds.

7. Now you can pour the sauce you’ve been tending to for the last 30 minutes or so into the wok. Also add some tomato puree, and the cooked chicken cubes.

8. Bring the curry to the boil before lowering the heat and leaving it to cook for 15 minutes, stirring occassionally.

9. After 15 minutes or so add the peppers and garam masala into the curry and stir.

10. Cook for another 15 minutes adding boiling water if the sauce is becoming too thick.
