The Van Houten family were the originators of the chocolate bar, around the time of the Industrial Revolution they revolutionized the gourmet chocolate bars industry by being the first to invent the means for their manufacture. Before the eighteen-hundreds, however, cocoa did exist but was enjoyed in many different ways.

Arguably one of the most popular flavors in the world, the cocoa bean is harvested today, in large quantities, in Western Africa. Its origins, however, were the exotic jungles of Mesoamerica where cocoa was used as a form of currency as well as a plethora of other things. In fact this plant product was near revered by these people as a fruit of their gods.

Originally cocoa beans were used during ritual ceremonies, or made into alcoholic drinks which were much enjoyed by the Aztec people. Despite there origins in the Americas, the majority of beans are grown in Western Africa today. The alkaloids in Chocolate are believed to be closely related to the brain in the sense that eating of this alkaloid will increase serotonin levels thus making one presumably happier.

The process for making these confectioneries has certainly changed over the years, and today there are a number of larger as well as smaller operations which produce chocolate products of varying qualities. There are certainly a number of modern recipes that exist as well, that have been passed down from generation to generation and remain a secret.

This popular substance ranges in variety but comes commonly in three variations. There is the dark form which is higher in cocoa and can be rather bitter depending on how it is sweetened or not sweetened. There there is milk chocolate and a white variety as well.
